Meatloaf and Cookies

I’ve always wanted to try making meatloaf, and today that magical dream came true. It looks….. interesting. Kind of greasy. I used low fat mince, and this recipe uses grated vegies. But still, that’s one hunk-o-meat!

Here’s hoping it tastes good. We’ll have it tonight with salad for dinner. Here’s the recipe if you’d like to give it a go.

I have also had these cookies on my to-do list ever since The Red Deer made them. They live up to their review. I cooked them for 8-9 mins per tray, which for me gives the perfect subway-cookie texture. I also used some of the dough to make cookie dough ice cream (ie. chuck some vanilla ice cream into a container, add cookie dough, mix, freeze). YUM!
