What a difference a day makes

I won’t say I’m completely over my worry-wart-itis, but I had a MUCH better day at school today. I can’t say enough how much I love my class. I have a really awesome class this year, they are a lovely bunch of kids. One of the problems yesterday was that I was working with someone else’s class…. anyway today I had a really nice day with my lovely kids, and tomorrow is grandparents day and book week parade, and it’s all going to be ok
Today was extra nice because all of my baking last night worked a treat, and everyone at work loved my lemon slice, strawberry cheesecake muffins (thanks Liss!!) and Triple C Balls.

I have never made lemon slice or the strawberry cheesecake muffins before, but they both worked perfectly and were devoured in minutes by the hungry staff room crowd. The Triple C Balls, which I tried for the first time on the weekend, were also a hit. I modified them slightly, making sure there was plenty of caramel to biscuit ratio (I used 1 1/2 tins of caramel to one packet of Nice biscuits).

I’m definitely going to make all three of these recipes again.
