Chocolate, Caramel and Coconut Balls and Seven Layer Slice
I was in the mood for ‘baking’ on the weekend, and decided to try and make these yummy desserts to take to a family BBQ.
The first one is a super easy twist on the good old Aussie rum ball – Chocolate, Caramel, Coconut Balls (I’m gonna call them Triple C Truffles from now on).
I would definitely try this recipe again, although next time I would make them a little smaller! These were huge once I’d coated them in the chocolate. I ran out of chocolate too, so I would recommend using exactly what the recipe asks for (if not a little more – damn you Cadbury, and your new 200g blocks!).
This Seven Layer Slice was also super easy to make. The weirdest part was the instructions for making the biscuit base. You put melted butter into your baking tray, than add the biscuits on top without mixing the two together. You press them both together in the tray, then add the other layers without baking the biscuit base first.
I found that I didn’t have enough butter at first, so I had to add a little more, and then it ended up tasting too buttery and was crumbly after baking and slicing. Next time I’d stick to a tried and true cheesecake base like Mum used to make, then continue with the layers in the recipe.
I’d definitely make it again though!
Both of these treats went down very well at the BBQ, with recipe requests being voiced :)
